Beef cheek is lean, chunks of muscle meat with some gelatinous material. Cheek meat comes in chunks of 1/3 to 1/2 pound, convenient sizes for medium to large dogs. It is very tough and excellent for dogs that like to chew but not for dogs that swallow whole. It is recommended for safety when feeding cheek to be present with your dog. Ground green tripe is roughly chopped and suitable for young puppies and dogs that are not adept at chewing. Green tripe is a dog-favorite, although not the most pleasant of odors for dog owners. This is sold by the pound.
